Chuy's

So, my brother works at the Chuy's here and so I have been a number of times since it opened... and I have to say they have some very good veggie options!! The other night I had the Veggie Enchiladas with charro beans (no pork in any of their beans!) and the hatch chili rice. My brother had been suggesting them for a while... and WOW was he right!! They are awesome!!! I totally suggest they be tried! All sorts of grilled veggies stuffed inside blue corn tortillas in a covered in hatch chili sauce.... AMAZING!!!

Vegan in tha 'Co????

Getting back to the ole hometown has been quite an experience....But the most striking is the fact that now that I don't eat meat, and was for the most part going vegan in FTW....I have no clue what to eat in this town.... I always brag that our saving grace is the great food.... I mean... Come on!!! Whatever you want in the delicious food department, the ole hometown has... and boy do those local places do it right!!!! Not in a chain restaurant crappy mass produced type way either!! Want a great handmade bacon potato egg cheese and bean breakfast burrito that will really fill you up?? Leal's will do it any way you want it and make it tasty and huge!! And their salsa is awesome.... Craving a pizza?? Poppa Rollos peperoni on thin and crispy with garlic butter... cheesy, crispy pepperoni goodness will fill that void... Maybe you want a soup and sandwich? Original Schmaltz-no tomato-with Wisconsin cheddar soup and a delicious fountain Big Red is blue plate greatness... Piles of Nachos is your hankering? Those Panchos Nachos at La Fiesta and a big old margarita hit the spot every time... How bout just pure sinful delightful indulgent greatness?? Gut-pack served right up at Vitek's!! What did you say? A burger??? Well what type do you want??? Because the great burger joints are legendary.... Double-R, Bill & Bobs, Kitoks with a side of those oriental fries,Cupp's Drive In, Health Camp, the legendary Kim's and of course, where they still beat those patties like my great grandmother taught 'em, Captain Billy's.....But what on earth am I going to eat as a vegetarian?? This is the land of all things MEAT!!! In FTW and even the big DCO eating vegetarian was like an adventure, a whole new menu opened up... but here  I'm stumped!! I have NO craving to eat meat, I just, for once, have no idea of what's good to eat here that doesn't include a slab of death..... So... I have decided as I explore, and venture out from moms I am going to do a review of the best vegetarian dishes in the ole 254!! Bring it on!! I challenge you to a meatless tasty adventure!
